Great Kitchens Relies on SAFELINE to Ensure Food Safety

Great Kitchens, one of the largest private-label manufacturers of frozen “take and bake” pizzas in the USA takes great care to produce the highest quality products. With food safety a top priority for the company, they chose to partner with METTLER TOLEDO SAFELINE to address their metal detection needs.

To maximise production flexibility, SAFELINE designed its PowerPhasePLUS* metal detectors to operate at multiple frequencies to automatically accommodate variations in product specifications. Featuring an advanced coil design for superior detection sensitivity, PowerPhasePLUS metal detectors zero in on all metal types, including ferrous, the normally difficult-to-detect non-magnetic stainless steels, and non-ferrous metals including aluminium. “We measure the success of our metal detectors based on the consistent verification of detection sensitivity as well as equipment uptime,” notes Jim LaRocco, Vice President of Operations at Great Kitchens.

With the growing popularity of take-and-bake pizzas and Great Kitchens' success in winning and continually satisfying major national accounts, the company is experiencing double-digit growth. “The SAFELINE metal detectors give us the versatility to continue to increase our production throughput while maintaining high quality assurance,” says LaRocco. “From a maintenance standpoint, they are easy to keep up. At Great Kitchens, the environment varies dramatically – from 45°F (7°C) during production shifts to high temperatures and humid conditions during sanitation shifts. The PowerPhasePLUS metal detectors are designed to handle this extreme temperature fluctuation as well as the high-pressure wash-down procedures. “We are very happy with the reliability of the SAFELINE metal detectors, their ability to operate dependably in our cold environment and their ability to handle our hot water washdown,” confirms LaRocco. The SAFELINE detectors exceed NEMA 4X specifications.

“With multiple frequencies, Great Kitchens can inspect either fresh or frozen product,” noted Steve Stark Sales Representative for Westlake Inc., who introduced the SAFELINE detectors to Great Kitchens. “Currently, they are inspecting only frozen products, but the multiple frequencies give them the flexibility to do both in the future.” The metal detectors are one of the critical control points in Great Kitchens’ HACCP plan. “To ensure the detectors are performing to our high standards, we test each one every 15 minutes to verify sensitivity,” noted LaRocco. “An additional layer of security exists with these detectors because they require an access code that prevents unauthorized adjustments.”
